Essential Ingredients
- Salmon: This recipe works well with any salmon fillet, but varieties with higher fat content like sockeye, king, and coho are especially delicious. These types of salmon retain their moisture and tenderness when baked.
- Sour Cream Sauce: A combination of sour cream (preferably full fat), whole-grain mustard, and grated parmesan cheese creates a flavorful sauce for the salmon. If you don’t have whole-grain mustard, Dijon mustard is a suitable substitute.
How to Prepare Sour Cream Baked Salmon
This salmon recipe is a favorite for its rich flavors and quick preparation, making it ideal for busy evenings. It’s also a hit when served at dinner parties!
To make this dish, simply place the salmon fillets on a baking sheet or in a baking dish, then generously coat them with the sour cream sauce.
Bake the salmon until it’s easily flaked with a fork. Cooking time for 1-inch fillets is typically 10 to 15 minutes. The sour cream sauce acts as a protective layer, ensuring the salmon remains tender and moist inside.
I recommend serving this dish with sautéed vegetables like green beans or garlic butter zucchini, along with mashed potatoes for a satisfying meal.

This easy baked salmon recipe is perfect for a quick weeknight dinner yet elegant enough for special occasions. The salmon is coated with a creamy sour cream, mustard, and parmesan cheese sauce. To ensure perfectly cooked salmon, avoid overcooking it. Bake until the salmon is just cooked through at the thickest part, then let it rest for a few minutes to retain moisture and flavor.
4 Servings
Ingredients
4 salmon fillets, about 6 ounces each
1/2 (113g) cup sour cream
1 ½ teaspoons whole-grain mustard
1/3 cup (20g) finely grated parmesan cheese
Salt and fresh ground pepper
Instructions
1Preheat the oven to 425°F (218°C). Lightly oil a rimmed baking sheet or large baking dish (or line with parchment paper).
2Combine the sour cream, mustard, and parmesan in a small bowl. Season with salt and pepper.
3Arrange the salmon on the baking sheet and spread two tablespoons of the sour cream mixture on each fillet.
4Bake for 10 to 15 minutes until the salmon is just cooked through at the thickest part. The center should be firm with a slightly undercooked center. Adjust cooking time based on the thickness of the salmon. (Internal temperature should reach 125°F).
5Remove from the oven, cover loosely with foil, and let it rest for 5 minutes before serving.
Tips from Joanne
- White residue on cooked salmon: The white substance on cooked salmon, known as albumin, is safe to eat but can be removed for aesthetic reasons. Drizzle some cooking liquid over the fish to enhance its appearance.
