Why I’m Obsessed with Making Green Rice Every Week

Because green rice is my ultimate comfort food.
I can’t get enough of this fluffy, flavorful dish that’s perfectly spicy and bursting with green goodness.
Traditional green rice is usually made with herbs, jalapeños, or poblanos for heat, and served as a side with Mexican or Latin American meals.
But this version uses spinach as the base and serrano peppers for spice, creating a versatile herbal flavor profile. It pairs well with Mexican, Thai, Indian, and even BBQ dishes.

Just a heads up, this green rice has a bit of a kick, so it may not be suitable for young kids. But for adults like me and my partner, it’s a must-have dish that’s worth savoring.
