Master the Art of Baking Fish in Parchment Packets

This recipe is a breeze to prepare. Grab a sheet of parchment paper, load it up with all the ingredients, fold it into a packet, and let it bake in the oven until the fish is tender and the veggies are cooked to perfection.

How to Bake Fish in Parchment Packets

Season the fish with a touch of salt, pepper, and a hint of cinnamon. Despite the surprising addition of cinnamon, the blend of orange and cinnamon is surprisingly delightful. Top it off with olives, squash, and tomatoes. Canned tomatoes work well, but fresh ones are just as good.

Adding the vegetables

Drizzle a bit of olive oil, add a few orange slices and some fresh thyme. Just before sealing the parchment, pour a couple of tablespoons of liquid over the fish and veggies. Whether it’s chicken stock, fish stock, or a dry white wine, any of these options work wonders. The liquid helps the fish steam inside the packet, preventing it from drying out.

Time to fold the parchment paper and create those cute little packets. Bring two sides together, roll and seal the edges, ensuring the packet is completely closed. Repeat the process with the ends and transfer to a baking sheet. In just 12 to 15 minutes, the fish will be perfectly cooked, and the veggies will be tender.

Easy Baked Fish in Parchment with Orange and Olives

For this recipe, we recommend using fresh thyme. If you opt for dried thyme, use ¼ teaspoon. Other fresh herbs like basil, dill, or parsley also work well. When serving, place the parchment packet on each plate and allow your guests to cut through, releasing the delightful scents of cinnamon, orange, and herbs.

Makes 2 servings

You Will Need

2 (6-ounce) firm white fish fillets such as Pacific halibut, Pacific rockfish, or Pacific cod

¼ teaspoon ground cinnamon

Salt and freshly ground pepper

1 cup diced zucchini and yellow summer squash, ¼-inch cubes

¼ cup pitted olives, halved

1 tablespoon extra-virgin olive oil

¼ cup drained canned diced tomatoes

4 tablespoons chicken stock, fish stock, or dry white wine

4 thin orange slices

2 sprigs fresh thyme

Directions

    1Heat the oven to 400 degrees F. Cut two 16-inch squares of cooking parchment paper or use foil.

    2Place both parchment squares on your work surface. Season both sides of the fish with cinnamon, salt, and pepper, then position one fillet in the center of each parchment square.

    3Divide the olives, zucchini, yellow squash, tomatoes, and olive oil between the fillets, piling them on top. Season with another pinch of salt, a few grinds of black pepper, and pour two tablespoons of liquid (stock or wine) over each fillet. Top with orange slices and thyme.

    4To create the packets, roll and seal opposite sides of the parchment paper over the fish and veggies, then roll and seal the ends to lock in the steam.

    5Place the packets on a baking sheet with raised edges. Bake until the fish easily flakes with a fork, about 12 to 15 minutes depending on the fillets’ thickness. To check for doneness, carefully open one end of a packet. Transfer the packets to plates for serving.
