We adore this simple fish recipe. It requires minimal ingredients and is incredibly quick to whip up. Scallions (or spring onions) play a significant role in this dish. While scallions are commonly used as a finishing touch, they can be utilized for much more — they have a mild flavor, are not overpowering, and when cooked, they become sweet, tender, and wilted.

Steps to Baking Fish with Scallions and Orange
Opt for a sturdy white fish for this recipe — rockfish, striped bass, or halibut are all excellent choices.

You will also require scallions, fresh orange juice, red pepper flakes, lemon zest, and butter. To prepare, start by sautéing thinly sliced scallions until they are wilted and starting to brown.
Season the fish, place it in a baking dish, then layer with the cooked scallions. Sprinkle lemon zest and a few small butter pieces on top, then pour in fresh orange juice. Cover the dish with foil and bake. After approximately 15 minutes, the fish will be perfectly cooked, and the melted butter will combine with the orange juice, creating a silky broth.

Perfectly Baked Fish Recipe with Scallions and Orange
If possible, use freshly squeezed orange juice for this dish. One large orange should be sufficient. When selecting the fish, opt for a firm white variety — halibut, striped bass, and rockfish work particularly well.
Makes 4 servings
You Will Need
12 scallions
1 tablespoon extra-virgin olive oil
¼ teaspoon crushed red pepper flakes
4 (6-ounce portions) firm white fish, such as rockfish, striped bass, or halibut
1 tablespoon lemon zest
1 tablespoon butter
¼ cup orange juice
Salt and fresh ground black pepper
Directions
1Preheat the oven to 425 degrees F.
2Remove the top 2 inches from each scallion. Halve the scallions crosswise and thinly slice them lengthwise into strips.
3Heat the olive oil in a skillet over medium heat. Add the scallions, red pepper flakes, and a pinch of salt. Cook, stirring occasionally, until the scallions are wilted and start to brown.
4Season both sides of the fish with salt and pepper, then place them in a single layer in a baking dish. Distribute the cooked scallions over each piece of fish. Sprinkle lemon zest over the scallions, then cut the butter into small pieces and place on top.
5Pour the orange juice around the fish, then cover the pan with aluminum foil. Bake until the fish is opaque throughout, approximately 15 to 18 minutes, depending on the fish’s thickness.
