Herbed Shrimp Salad Recipe on Endive Spears

Shrimp is excellent, but chicken, lobster, and crab are also great options. The dressing provided is versatile and can be used as a dip for veggies or a salad dressing. Lime is essential for both the shrimp and the dressing. When zesting the lime for the dressing, do so before juicing it for optimal flavor.
Makes 4 to 6 servings
You Will Need
Shrimp
1 pound shrimp, shelled and deveined
2 tablespoons olive oil
½ teaspoon sea salt
⅛ teaspoon fresh ground black pepper
2 tablespoons lime juice
Salad
½ cup sour cream
2 tablespoons mayonnaise
1 teaspoon lime zest
1 tablespoon lime juice or more to taste
1 tablespoon chopped tarragon leaves
2 teaspoons chopped mint leaves
3 tablespoons chopped parsley
Salt and fresh ground black pepper
3 medium-size endive, leaves pulled apart
Directions
1Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
2Coat the shrimp with olive oil, salt, and pepper. Arrange the shrimp on the baking sheet in a single layer. Roast for 5 to 10 minutes until pink, firm, and fully cooked. Immediately toss with lime juice.
3While the shrimp is roasting, prepare the dressing. Combine sour cream, mayonnaise, lime zest, lime juice, herbs, salt, and pepper in a large bowl. Alternatively, use a food processor for blending. Adjust the seasoning with salt, pepper, or lime juice to taste.
4Chop the roasted shrimp into bite-sized pieces and add to the dressing. Mix well and serve on endive leaves.
