These simple Korean beef bowls are perfect for a quick weeknight dinner, with flavorful beef, zesty slaw, and spicy garlic sauce!

Slaw + Sauce + Beef
This recipe has three main components:
- Zesty slaw with crunchy cucumbers
- A creamy, spicy, garlicky sauce
- Flavorful Korean-style ground beef
Although the ingredient list may seem long, each component comes together quickly. You can make the slaw and sauce ahead of time to streamline dinner prep!
To make prep even easier, you can use a bag of pre-shredded coleslaw mix with cabbage and carrots as called for in the recipe.



Assembling Korean Beef Bowls
These Korean beef bowls taste amazing with the three main components. But they’re even better with a few extras.
Here’s how we like to serve them:
- Hot, cooked rice
- Korean beef
- Slaw
- Sauce (and extra sauce)
- Lime wedges
- Chopped cilantro
- Avocados
Sometimes we add naan bread on the side for a delicious meal!




Build-Your-Own Meal
This recipe is fantastic for a family-friendly dinner because everyone can customize their beef and rice bowl.
Personally, I load up on extra beef, slaw, sauce, and lime. Sometimes I add a bit more sriracha and plenty of cilantro.
My family prefers their bowls with a little less cabbage, but that just means more leftovers for me!

If you want a slight change, try using the beef sauce as a marinade for salmon. Marinate the salmon for a couple of hours, then grill, air fry, or broil it and serve with the other components. It’s incredibly delicious!

Easy Korean Beef Bowls
Quick Slaw:
- 4 cups shredded cabbage (napa, green, purple, or a mix) – see note
- 1 cup shredded or grated carrots
- 1 cup chopped cucumbers
- ¼ to ½ cup chopped fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- Salt and pepper
- Sriracha, to taste
Sauce to End All Sauces:
- ½ cup sour cream
- ½ cup mayonnaise
