These BBQ chicken pineapple skewers are not just for summer cookouts, they also make a simple and delightful weeknight meal that my family adores!

The Key Marinade
The marinade is the secret to these flavorful BBQ skewers!
- ketchup
- honey
- vinegar
- worcestershire sauce
- garlic
- paprika + chili powder + salt + pepper
The frozen garlic cubes in the marinade bowl are a convenient addition for that fresh garlic flavor without the hassle.
Marinate the chicken for at least two hours, but up to 24 hours for maximum flavor.

Chicken Breasts vs Chicken Thighs
While chicken thighs are slightly preferred for these skewers, both chicken cuts work well.
If using chicken breasts, be cautious not to overcook as they cook quickly due to their small pieces.
Chicken thighs are great as they remain juicy and flavorful, unlike chicken breasts that can dry out if overcooked.
Although thighs are favored for their taste and juiciness, the fat-trimming process can be a drawback for some.
Regardless of the chicken cut, keeping an eye on the cooking time is crucial for excellent results!

Grilling/Cooking Methods
I prefer using a pellet smoker/grill for all my grilling needs. For this recipe, I grill the skewers at 375 degrees F for a few minutes on each side.
A regular propane or charcoal grill works just as well.
If a grill is unavailable, broiling the skewers on a foil-lined baking sheet for 3 to 4 minutes per side is an alternative (monitor closely).
Another option is to cook the chicken, pineapple, pepper, and onion in an air fryer without the skewer for a different twist!

Grilled pineapple is a personal favorite, and when paired with flavorful chicken, it’s a winning combination. The blend of zesty BBQ flavors, sweet pineapple, and crisp veggies is simply amazing.
We enjoy these skewers regularly as they are too good to save only for special occasions!

- 1 tablespoon garlic, finely minced (or 1 1/2 teaspoons garlic powder)

- ½ teaspoon coarse, kosher salt
